Sempervivum ‘More Honey’ is a striking, large-rosetted cultivar of the beloved European “hens and chicks” group, bred for its vivid colour transitions and hardy, clumping growth habit. Belonging to the Crassulaceae family and native in origin to alpine and mountainous regions of southern Europe, Sempervivum species have evolved to withstand extreme conditions — from rocky outcrops and scree slopes to snow-covered winters — making them exceptionally resilient choices for Australian gardens.

This variety forms bold, fleshy rosettes of lime-green leaves that transform with the seasons, flushing with orange-red and burgundy tones in full sun or cooler weather. Each leaf is edged with a delicate fringe of cilia (fine hairs), adding a soft, textural quality and helping to reduce water loss — a natural adaptation to dry, alpine climates. As the plant matures, it produces offsets on pink stolons in spring, quickly forming expanding colonies that bring vibrant life to rockeries, green roofs, pots, and crevice gardens.

‘More Honey’ is monocarpic: each rosette flowers once before dying, but its many offsets ensure a continuous, thriving colony. In summer, mature rosettes send up leafy flower stalks topped with clusters of star-shaped blooms in shades of pink to reddish-rose, a magnet for bees and other pollinators.

Thriving in full sun and gritty, well-drained soil, this evergreen succulent is both drought- and frost-tolerant, making it ideal for Australian climates with hot summers and cool winters. Low-maintenance and long-lived, it resists damage from rabbits and deer and can be easily propagated by separating offsets. Simply remove spent leaves to maintain its health and appearance, and enjoy its ever-changing colours and architectural form year-round. (Approx. rosette diameter: 12–15 cm)
